This is a winter comfort bowl of food.
Garlic bread is a good accompaniment and a tomato and onion salad is a foil for the richness of the main dish.
Ingredients for 2
- 150-200g spaghetti
- 150g blue cheese. Use cheddar if you prefer. Chop the cheese into small pieces or grate.
- Water to cover the spaghetti to boil
- 2 Glasses Dry white wine
- Cracked black pepper to taste
- 2 Cloves of garlic finely chopped or grated
- Finely chopped green herbs. Coriander, Basil and Parsley are good options
- 100ml Double cream
- 30g Butter or olive oil
- Salt to taste
- 1 TSP Sugar
Method
Boil the spaghetti to your preference either al dente or soft as preferred. Drain and return to the pan and add the cheese, garlic, wine, sugar and cream and simmer gently until the cheese melts and the sauce thickens. Depending on the cheese used you may have to help break it down with the back of a spoon.
Taste and season with salt if needed. Add the butter or olive oil and stir in well. Serve in bowls and add cracked black pepper and herb or herbs of choice.
